Homemade Apple Muffins

This morning I just really wanted to bake and use some of our apples from our recent orchard trip. A quick search of “healthy Apple muffins” turned up this recipe and it did not disappoint!

The finished product was perfect! Literally heavy with so many nutritionally dense ingredients and bursting with so many delicious flavors. 

Shredding the apples and carrots was the hardest part but once all ingredients were gathered it was SO easy!

Just basically mixed it all up and put it in the oven. It called for 12 large muffins but I was able to fill 15 to 
the top and bake about 20 minutes instead of 15. I also substituted raisins for the cranberries because I had them in hand.

I’m so glad I made these! Bents loved them and it was a great way to get lots of fiber into his day. Travis ate them like cupcakes, and Ryder enjoyed one, too! I won’t say how many I ate! 😳🙈👍🏻
